Ingredients

  • Water Water 1 litre 4 cups
  • Red Onion Red Onion 2 2
  • Brown Lentils Brown Lentils 80g 2/5 cup
  • Carrot Carrot 3 3
  • Large Vine Tomatoes Large Vine Tomatoes 1 1
  • Table Salt Table Salt 1/2 tsp 1/2 tsp
  • Bouillon Vegetable Stock Bouillon Vegetable Stock 1 tsp 1 tsp
  • Ground Cumin Ground Cumin 1 tsp 1 tsp
  • Thyme Thyme handful handful
  • Ground Black Pepper Ground Black Pepper pinch pinch

Instructions

  1. 1.Heat the olive oil in a pot, add diced red onion, raw brown lentils, diced carrots and chopped tomato, stir-fry for 2-3 minutes.
  2. 2.Pour hot water into the pot, then stir in the rest of the spices, cook for another 20 minutes in medium heat.
  3. 3.Blend the soup with a hand blender, sprinkle some fresh thyme and serve.
