This flavorful barley and chickpea salad is easy to prepare and perfect for a buffet, party platter or in your weekly meal prep!

Dairy Free High Protein

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Barley Barley 200g 1 cup
  • Water Water 750ml 3 cups
  • Chickpeas Chickpeas 200g 1 cup
  • Raisins Raisins 150g 1 cup
  • Fresh Parsley Fresh Parsley a bunch a bunch
  • Peanuts Peanuts 150g 1 cup
  • Dill Oil Dill Oil 2 tbsp 2 tbsp

Instructions

  1. 1.Wash the Barley and put it into a saucepan with 3 cups of boiling water. Cook for 45 minutes on a low heat. Once the barley has absorbed all the water, cover the pan and set aside.
  2. 2.Boil the chickpeas (previously soaked overnight) with plenty of water for 75-90 minutes, until soft.
  3. 3.Wash and chop the parsley.
  4. 4.By hand gently mix the dill oil with the barley, chickpeas, raisins, parsley and peanuts.
