Cauliflower Quinoa Burger Sliders

Junk food with a healthy makeover, there's lots to love about these tasty cauliflower and quinoa sliders. Topped with juicy mushrooms and onions, served with a delicious vegan BBQ sauce.

  • Mustard Mustard 1.5 tsp 1.5 tsp
  • Worcestershire Sauce Worcestershire Sauce 1.5 tsp 1.5 tsp
  • Paprika Paprika 1/4 tsp 1/4 tsp
  • Ground Black Pepper Ground Black Pepper 1/4 tsp 1/4 tsp
  • Red Chili Flakes Crushed Chillies 1/4 tsp 1/4 tsp
  • Burgers:
  • Olive Oil Olive Oil 2 tbsp 2 tbsp
  • Cauliflower Cauliflower 1/2 head 1/2 head
  • Yellow Onion Brown Onion 1 1

  • Quinoa Quinoa 45g 1/4 cup
  • Water Water 125ml 1/2 cup
  • Organic Eggs Organic Eggs 1 1
  • Sea Salt Sea Salt 1/2 tsp 1/2 tsp
  • Oat Flour Oat Flour 30g 1/4 cup
  • Slider Buns Slider Buns 6 6
  • Vegetarian Cheese Slices Vegetarian Cheese Slices 6 6
  • Lettuce Lettuce 6 leaves 6 leaves

Instructions

  1. 1.Combine BBQ sauce ingredients in a blender and blend until smooth, set aside.
  2. 2.Heat 1 tbsp oil in pan over medium-high heat.
  3. 3.Add diced onion, garlic and spices and cook until onion becomes translucent.
  4. 4.Add cauliflower florets and cook, stirring, for 10min.
  5. 5.Transfer cauliflower mixture to a blender and pulse until mixture becomes sticky (don't over pulse).
  6. 6.Transfer mixture to a sieve and place over bowl to get rid of access liquid.
  7. 7.Transfer mixture to a bowl, add whisked egg and stir well to combine.
  8. 8.Shape mixture into small burger patties.
  9. 9.Heat 1 tbsp olive oil in a pan and cook burgers over medium-high heat until golden brown.
  10. 10.Assemble burgers and serve immediately.
