A deliciously filling and creamy tofu masala curry, gluten free and rich in protein!

Gluten Free High Protein Under 30 mins

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Tofu Tofu 180g 3/4 cup
  • Yellow Onion Brown Onion 1/2 1/2
  • Basmati Rice Basmati Rice 120g 2/3 cup
  • Diced Tomatoes Chopped Tomatoes 250g 1 & 1/4 cups
  • Coconut Milk Coconut Milk 100ml 2/5 cup
  • Fresh Cilantro Fresh Coriander handful handful
  • Frozen Peas Frozen Peas 12g 1 tbsp
  • Garam Masala Garam Masala 4 tsp 4 tsp
  • Ground Turmeric Ground Turmeric 2 tsp 2 tsp
  • Red Chili Flakes Crushed Chillies 1 tsp 1 tsp
  • Ginger Root Ginger Root thumb thumb
  • Garlic Garlic 1 clove 1 clove
  • Cornstarch Cornflour 2 tbsp 2 tbsp
  • Rapeseed Oil Rapeseed Oil 2 tbsp 2 tbsp
  • Table Salt Table Salt seasoning seasoning
  • Ground Black Pepper Ground Black Pepper seasoning seasoning

Instructions

  1. 1.Take out the tofu and dry with kitchen towels, squeezing out any excess water. Cut into cubes. Place tofu into a mixing bowl.
  2. 2.In a second bowl, pour in the garam masala, turmeric, crushed chillies and cornstarch (cornflour). Mix.
  3. 3.Now add half of this spice mix to the tofu bowl, and mix thoroughly so all tofu cubes are well coated.
  4. 4.Add a saucepan of water onto the hob and heat. Once boiled, reduce to simmer and add the balsamic rice, cook for 20 mins approx. as per package instructions.
  5. 5.Add oil to a frying pan and cook the coated tofu pieces, turning regularly so all sides are nicely cooked. Cook for 5-6 mins.
  6. 6.Meanwhile, peel and chop the onion, garlic and ginger.
  7. 7.Once the tofu is cooked, take off the hob and set the tofu to one side. Now add a little more oil to the frying pan and cook the onions, ginger and garlic as well as the other half of the spice mix. Cook for 4 mins.
  8. 8.Next, add the chopped tomatoes, mix and cook for 4 mins.
  9. 9.Now, pour the saucepanĀ“s contents into a blender. At this point, add the coconut milk and blend.
  10. 10.Once smooth, pour the sauce back into the frying pan, add the tofu pieces and cook on a low heat for 3-4 mins.
  11. 11.Separately, in a small saucepan boil the water and add a handful of frozen peas, cook for 4 mins.
  12. 12.Once all cooked, serve with a fresh coriander (cilantro) and pea garnish.
