A light and refreshing vegan salad combining fresh grapes, cooked beet, mixed seeds and a lime and olive oil dressing. Perfect on a hot summer day!

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Lettuce Lettuce 1 head 1 head
  • Cooked Beet Cooked Beetroot 1 1
  • Salad Tomatoes Salad Tomatoes 2 2
  • Red Grapes Red Grapes 75g 1/2 cup
  • Sunflowers Seeds Sunflowers Seeds 2 tbsp 2 tbsp
  • Pumpkin Seeds Pumpkin Seeds 2 tbsp 2 tbsp
  • Olive Oil Olive Oil 1 tbsp 1 tbsp
  • Lime Lime 1 1

Instructions

  1. 1.Rinse and roughly chop the lettuce.
  2. 2.Rinse the tomatoes and cut into quarters along with the beetroot. Add the salad, tomatoes and beetroot to a salad bowl.
  3. 3.Wash the grapes and add to the salad along with sunflower and pumpkin seeds.
  4. 4.Drizzle the salad with olive oil and freshly squeezed lime juice. Mix the salad together and serve.
