This finger-licking zucchini (courgette) crust pizza is super healthy, it's low-carb and gluten free! It’s prepared with fresh ingredients and so yummy - dig in before it's gone!

Ingredients

  • Pizza Crust:
  • Zucchini Courgette 5 5
  • Cheddar Cheese Cheddar Cheese 115g 1 cup
  • All Purpose Flour Plain Flour 80g 2/3 cup
  • Garlic Garlic 2 cloves 2 cloves
  • Dried Oregano Dried Oregano 3 tsp 3 tsp
  • Fresh Basil Fresh Basil 1 tsp 1 tsp
  • Organic Eggs Organic Eggs 2 2
  • Table Salt Table Salt 1/2 tsp 1/2 tsp
  • Pizza Sauce:
  • Large Vine Tomatoes Large Vine Tomatoes 4 4
  • Olive Oil Olive Oil 2 tbsp 2 tbsp
  • Garlic Garlic 2 cloves 2 cloves
  • Dried Oregano Dried Oregano 1 tbsp 1 tbsp
  • Dried Thyme Dried Thyme 1 tbsp 1 tbsp
  • Table Salt Table Salt pinch pinch

Instructions

  1. 1.Preheat oven to 220C.
  2. 2.In a large bowl, toss the shredded zucchini (courgette) with 1/2 teaspoon of salt and set aside for 15 minutes.
  3. 3.Squeeze the excess moisture out by wrapping the zucchini up in a clean tea towel and wringing it out, discarding the water.
  4. 4.Once that’s done place the shredded zucchini back into the bowl and add the cheese, flour, garlic, oregano, basil, eggs, and salt.
  5. 5.Mix all the ingredients together with your hands.
  6. 6.Place the zucchini dough onto a piece of parchment paper on a baking tray. Using your hands, spread the dough to form a circle about one centimeter thick. Pinch the edges up so that it forms a nice crust.
  7. 7.Put baking tray into the heated oven and bake for 10-12 minutes or until the crust starts to brown.
  8. 8.In a large saucepan, add the tomatoes, olive oil, garlic, oregano, thyme, and salt.
  9. 9.Bring to a boil, breaking up the tomato. Reduce heat and simmer for 15-20 minutes.
  10. 10.Once simmered, puree all of the ingredients in a blender.
  11. 11.Top the zucchini crust with the sauce and any additional toppings of your liking.
  12. 12.Put the pizza back into the heated oven and bake for another 5 minutes.
